We think history is very important.
We have great respect for those who pass down their knowledge and culture to the next generation. Castella was formed in Japan in 1624 and it couldn’t exist today without those artisans and craftsmanship. We, as a new castella maker, decided to be the one who can pass down a little bit more than just history -- we make our castella with endangered kinds of wheat to save those species and market.
Today, we want to share our castella with hope and determination to pass down history and rich nature to the next generation.
